I LOVE to bake!  I don’t do it quite as much as I used to, mostly because I don’t need the extra calories, but nothing makes a house feel more like a home than the smell of something yummy baking in the oven.

A few years back I treated myself to a KitchenAid Artisan mixer and love how easy it is to make smooth creamy frosting!   With my daughter Aurora’s help, we made a German Chocolate cake (Pillsbury mix) and made the frosting recipe featured on Food.com.

Here it is, in case you feel equally inspired today!  Peanut Butter/Cream Cheese Frosting recipe

I used the Pampered Chef Spreader to spread the frosting on the cake and then did the border and the “Yum!” using the Pampered Chef Easy Accent Decorator.  I’m not a professional by ANY stretch of the imagination, but I have fun, which is the most important thing! 🙂

There was a photo of a delicious Coca-Cola cake that somehow vanished.  Thinking back, I’m guessing my ex was holding it in the prior photo, so it was lost in the purge of those photos.  It is better this way 😉  I will include the recipe for those who want to give it a try!

  • 1 C. Butter
  • 1/4 C. Cocoa
  • 1 C Coca-Cola
  • 2 C Flour
  • 2 C Sugar
  • 1 tsp Soda
  • 1/2 C Buttermilk (1 cup regular milk with 1 T white vinegar works as well!)
  • 2 Eggs, beaten
  • 1 1/2 C. Mini-marshmallows

Heat to boiling the butter, cocoa & Coca-Cola. Add flour, sugar & soda. Mix gently. Stir in buttermilk, eggs, vanilla & marshmallows (I would recommend letting your marshmallows melt a bit better than I did in the photo)

Pour into greased 9 X 13-in pan. Bake at 350 degrees for 30-35 min. Cake can be frosted while warm.

FROSTING

  • 1/2 C Butter
  • 1/4 C Cocoa
  • 6 T Coca-Cola
  • 1 C Mini-marshmallows
  • 1 Lb Powdered Sugar (3 3/4 cups for those of you who shop at Sam’s Club like me!)
  • 1 tsp Vanilla

Heat to boiling the butter, cocoa & Coca-Cola. Add marshmallows (let mostly melt). Beat in sugar & vanilla. Spread over cake. (If you do it while the cake is still warm, you can basically pour it over the cake, spread it around a bit and it will set beautifully without clumps and lines from the frosting.) 🙂

  1. You could sell these locally!! I am so not a baker. I am learning to cook again age 47- why I tell you this…our family ran a restaurant and owned it…I ate there my entire life till it closed when I was in my upper 20’s.

      Thanks! 🙂 I don’t know if I would have the patience to ever bake for a living, although I do enjoy baking. My cooking skills leave a lot to be desired. I’m a huge fan of store bought marinades and mixes 😉 I’m sure you have many tales to tell of growing up with a family restaurant. I would imagine it is very challenging! I used to work at a restaurant in high school making relish trays and busing tables and I know that the entire staff pretty much was on the go from the time they clocked in until the time they clocked out!!

      • I loved growing up in the restaurant business. It was so nice because every single occasion the entire family and extended families would gather at our restaurant to eat and enjoy. The memories I hold dear. My parents are dead and the restaurant and all the elders, but photo’s bring back the good ol’ days.

          It sounds like you have wonderful memories. Being able to gather family groups there sounds fabulous and I’m sure was so much fun! I love old photos for taking us back to happy times and memories!!
